Good nutrition and dreams of the future

Bon Appétit does monthly "Food for your well being" themed displays where they focus on one element of good nutrition and celebrate a week of information about that element. A display is set up prominently in the cafeteria with information about the importance of the month's theme, and the ingredient(s) or element(s) are woven into the week's menus.
This month's theme is Vitamin C - Ascorbic Acid. Ascorbic acid has many wonderful qualities including promoting the healing of wounds and aiding in the removal of free radicals from the body's system. It is a water soluble acid so it is nigh impossible to take too much, though when one takes more than the daily recommended dose, it can be less effectively absorbed by the body.

As part of the educational component Bon Appétit is reminding people that there are many great sources of vitamin "C" that are not citrus fruits. The table display today had a cornucopia of wonderfully healthy fruits and vegetables that are chock-a-block full of vitamin "C".

As I perused the table I enjoyed seeing the brightly colored bell peppers (which calorie for calorie have a much higher vitamin C content than oranges), broccoli, cauliflower, and wonderfully juicy strawberries. It made me all the more eager to get the ground at the farm prepared for planting, knowing that in just a few short months (and summer months are all too short up here) that we would be harvesting, holding and eating these same kinds of vegetables from the ground that we will have worked.
On a personal note, I could certainly pass over the cauliflower - it just doesn't taste like anything to me, but man am I having "broccoli dreams"!!!
